“Healthy” and “pasta” are two words that don’t usually go in the same thought bubble. However, Due’ Cucina tries to make it work with their ancient grain dough that has its own nutritional explanation listed on a chalkboard. You choose your sauce from options like carbonara 2.0 with pork belly and grated egg yolk, or braised hen with citrus. Then, decide your homemade fresh pasta shape, and your dish is made to order. While the novelty of it is a noble thing to try, healthy carbonara is sad. The cubes of house-cured pork belly were great, but none of that flavor permeated throughout the rest of the pasta or sauce. We’ll take our carbs unhealthy.
